Tropical fruits are hanging heavy on the trees in the summertime on St. John! Many of our villas have fruit trees in the yard that our Guests are welcome to pick and blend up in tropical drinks or add to creative Caribbean dishes. Below are photos of fruits we have picked in our yards along with tried and true recipes using each.

PINA COLADA ZUCCHINI BREAD

4 cups flour                                                       1 tsp coconut extract

3 cups sugar                                                      1 tsp vanilla

2 tsp baking powder                                        1 tsp rum extract

1-1/2 tsp salt                                                     3 cups shredded zucchini

1 tsp soda                                                           1 cup crushed pineapple (drained)

4 eggs                                                                  ½ cup chopped nuts

1-1/2 cups Canola oil        

Combine all ingredients. Pour into 3 prepared loaf pans. Bake at 350 for 45-55 minutes.

MANGO PORK CHOPS

4 pork chops                                            1 tsp ginger

1 large mango, divided                            1/2 tsp cayenne pepper, or to taste

1 small onion                                           1/2 cup water

1/2 cup raisins (preferably golden)          salt and pepper to taste

2 cloves garlice, or more to taste   

Peel the mango and then slice half and dice the other half.  Set the slices aside.  Chop onion and garlic.  Mix diced mango, onion, raisins, ginger, cayenne pepper, garlic, salt, pepper and water in saucepan.  Simmer until onions are soft and mixture is thick, but not dry, about 10 minutes.  Add a little more water, if necessary.  Set aside (this can be prepared ahead, if desired).  Preheat the grill.  Trim excess fat from the chops.  Lightly salt and pepper each side and grill to desire doneness.  Briefly grill the mango slices, if desired.  (They are good either grilled or not).  Servce chops with sauce spooned over the around them with slices on top.

SOURSOP ICE CREAM        

1-1/2 to 2-1/4 cups soursop puree

3 to 4 ripe bananas, well mashed

6 oz unfrozen, undiluted orange juice

1 can sweetened condensed milk

Peel soursoup, remove pulp discarding seeds, and puree through sieve or with food processor.  Combine all ingredients and freeze.  It takes several hours -- best to plan for overnight.
